In 1970, Albert Bourgerois and Walter Talleau incorporated the mom-and-pop catering business they had been running out of their Gretna kitchen for three years. Ray Comeaux helped run the business, while his wife Jacquie and his sister Jeanette served at parties and weddings. Ray inherited the business in 1990. Mss Jacquie and Jeanette ran the company for two years, fulfilling orders and continuing the tradition. In 2001, a friend of the Comeaux family asked John Gustin and his business partner to run the business. Gustin bought A&W, retaining Jeannette and Jacquie to ensure that all the original recipes were thoughtfully preserved.
Today A&W is a heritage Gretna establishment, among a handful of family-owned and operated Louisiana establishments to celebrate its first half century. Chef John Gustin continues the tradition serving deviled eggs, finger sandwiches, chicken salad, jambalaya and gumbo. "I never use processed ingredients," says Chef John, "and I never freeze my finger sandwiches."
